I’ve actually just recently started eating mayo, so egg salad is a new thing for me. I made my first batch of homemade avocado oil mayo last week and it was a game changer! Enough about the mayo, though it really does make a huge difference in taste and health for this egg salad, let’s get to the real reason you’re here. Bacon and Pickle Egg Salad. I don’t know if these are already a thing since I’m new to this whole game, but I like to experiment with food. They both turned out pretty good, if I do say so myself. My four year old was all over the pickle one. He devoured the rest of the bowl while I was snapping my pictures!
Pickle Egg Salad
Cut or mash eggs, set aside. Add mayo, pickle juice, mustard, salt, and pepper to a small bowl and whisk together. Stir in eggs and chopped pickles. Serve over lettuce and garnish with smoked paprika and chopped pickles. Enjoy!
